What the WEBP format is

RAW support in darktable depends on its bundled LibRaw version, so a newly released Canon camera may require a current darktable release.
Quality, compatibility, and limitations
WEBP conversion is a rendering step, not a container-only format change. The converter must decode the CR3, apply a color profile and tone curve, and encode the resulting raster image. A WEBP cannot retain the full editing latitude of the source RAW.
Use lossy WEBP for web delivery and previews. Lower quality produces smaller files but can create block artifacts, ringing around edges, and loss of fine foliage or texture. Lossless WEBP avoids lossy artifacts but can be larger than a well-encoded JPEG. Resize large camera images during export when the destination does not need their full resolution.
Use an sRGB output profile for websites and general device compatibility. Preserve EXIF metadata only when the destination supports it and privacy is acceptable; metadata may contain GPS coordinates, camera information, and timestamps. Keep the CR3 as the archival master because some applications, older operating systems, and professional workflows still lack WEBP support.
