Convert WK1 to TXT

Some modern spreadsheet programs are still able to open the old Lotus spreadsheets in WK1 format, which might be your best option how to achieve wk1 to txt conversion or any similar. You will most likely loose all of the original formatting, but there should be no problem to save the data in tables as plain text. Better would be to save in some kind of formatted text though, like CSV.
