Converting Microsoft Word Documents directly to Database Files (.doc to .db conversion) is, most likely, not possible; at least not without a workaround.

It appears your best option is to copy and paste the table into a Microsoft Excel worksheet. Then you open your MS Access database (creating a new one if necessary). Select the cells in MS Excel and copy them. Switch to the MS Access database, display the Tables object list and click the Paste command. Upon receiving a notification “Does the first row of your data contain column headings?”, simply answer “Yes” and your Access table is created. Right-click the table, select “Rename” and change the name of your table.
